When using the package inputenc with option [utf8] like so:

\usepackage[utf8]{inputenc}

latex complains:

! LaTeX Error: File `utf8.def' not found.

Note that this problem was detected when muttprint(1) was unable to
print UTF8 encoded messages.

Hi,

you use a UTF-8 environment - you need latex-ucs then. Then the inputenc
command *will* work:

You need it. That's why it is in muttprints Suggests.
It even is documented in the manual:
