Since /var/log/exim is not part of the .deb file, dpkg-statoverride cannot
be used on it.  Thus in order to allow the user to override the permission
and ownership of it, please only chown/chmod in the postinst at installation
time.

The exim package has been removed from Debian testing, unstable and
experimental, so I am now closing the bugs that were still opened
against it.

For more information about this package's removal, read

this package was removed, and suggestions of possible replacements.
