The size of the icon is only 32x32, which is not very beautiful on
larger panels.
A 48x48 png file is available here :

Hello Sylvain,

the accessories-text-editor icon is the one expected to be used as the
gedit icon, from a GNOME point of view.
If a 48x48 icon was to be added, icons for other sizes would also have
to be added, this would be a duplication of work. I find that the main
reasons to decline adding such icons would be that a) there's already
one available in gnome-icon-theme (and other gnome icon themes) and b)
the xmp icon is not expected to be used in the panel.
