In sylpheed from Debian lenny it is not possible to change
any keyboard shortcut.
(Assuming that the procedure for this has not fundamentally
changed: showing with the mouse on an entry in the menu and
typing a shortcut does nothing.)

Yes, indeed. Adding
gtk-can-change-accels = 1
to .gtkrc-2.0 makes this feature working.
