My gnupg.conf contains the necessary information for this key to be
used by debsign:

Despite this, dcut selects the 1st one, which happens to make it
useless for me, since it looks like I cannot override its choice :)

It looks like debsign has some means to override its choice, using the
DEBSIGN_KEYID variable.  Furthermore, debsign now supports .commands
files by itself, and does select the correct key:
