Installing postfix installs resolvconf, which on every machine I've
installed postfix on I've then gone and purged resolvconf. I don't
understand why it is required, perhaps making resolvconf a recommended
package?

You mean like this:
Recommends: mail-reader, resolvconf
(Which has always been the case...)
Your package manager is defaulting to installing recommended packages -
if postfix Depended on resolvconf, removing resolvconf would also remove
postfix....
not a bug.
