Anytime I print an A4 size paper seems to be used, which my printer
cannot handle.  Sending the same job to the printer using lpr or xpdf
seems to work.

I believe evince uses the gnome-printing libraries, and the
configuration for that appears to be "Paper size: US Letter".  Evince
itself does not seem to have any options for setting paper size.

There's page size options in print menu.
Current evince in unstable shouldn't have this problem.
Reopen otherwise.
