For some reason, after a recent update, the suspend option disappeared from the
gnome-shell menu, which now only proposes the power off option. Pm-suspend
works correctly from a terminal.

Might have been related to your session not being marked active.
But we probably won't find out anymore as you can no longer reproduce
the issue.
I'm going to close this bug report because of that.
