Having made some more tests, I noticed that I can use the unstable versions of 
'debootstrap' and 'pbuilder' just 
fine, as long as the version of 'findutils' (which provides 'xargs') is the one 
from Sarge. Upgrading 'findutils' to 
the one currently in Etch produces the afforementioned "xargs: rm: Argument 
list too long" error.

Err, debootstrap doesn't actually use find or xargs, so this isn't a
debootstrap bug :) I'm not sure why I didn't notice this originally...
Oh well. :-/ Bug closed with this message -- hopefully whatever the real
bug is is fixed now too.
