When installing gstreamer0.8-alsa in stead of gstreamer0.8-oss, the
gconf info is not updated so that rhythembox, for example, uses the alsa
library. This means one have to use gconf-editor and search down the
place to manually change from oss to alsa. I don't know if this is easy
to do when installing gstream0.8-alsa, but it would be great if there was a
simpler way to do this.
PS: I don't use gnome only some of the programs.

What you describe is partly technically feasible, but won't happen.
Here are some explanations:
1/ most audiosink packages can be installed simultaneously, there must
be some sort of preference between the audiosinks so that the order of
installation doesn't change the end result
2/ each user can pick his preferred audiosink (eg. KDE users can use
artsd), and this can not be updated system-wide, only the default can
be (at the package level)
3/ system administrators can change the default audiosink system-wide
4/ system administrators can force the audiosink system-wide
5/ the default audiosink is picked in the gst-plugins0.8 source
package, for Debian altogether
Point 5/ is especially relevant here: Debian sarge ships with Kernel
2.4 by default, and that means "OSS". Etch will ship with 2.6, hence
"Alsa".
If you want details on how to achieve 3/ or 4/, check the Gconf
manuals.
