Hello,
in the mode line, there is an indicator of if I have mail. I'd like to
turn this feature _OFF_ so Emacs never shows that I have mail, but there
is no documented variable where I can do this (or at least not shown
when I search the Info manual).

This doesn't happen by default in the latest release, 24.3.
I'm not sure it even did (by default).
Check your .emacs if you still have this problem.
