The minetest package is missing a desktop file, causing the program to
not show up in the desktop menu in Gnome and KDE.

Hello,
that's not correct. Minetest has been providing a desktop file in all
versions since wheezy.
e.g. https://packages.debian.org/wheezy/amd64/minetest/filelist
