Both GNOME Settings and pavucontrol show the "missing" icon for my
bluetooth speaker. I added a little logging to pavucontrol and it
appears the icon name it requests is "audio-handsfree-bluetooth".

GNOME developers no longer wish for adwaita-icon-theme to provide
icons for every usecase, but specifically for core GNOME apps. They
recommend that apps that need other icons provide those icons
themselves.

I was unable to duplicate this issue with a bluetooth speaker and
gnome-control-center. Therefore, I am closing this request for
additional icons.
