Dear Maintainer,
I pressed Print Screen and I noticed that record screen button are hidden. Even
using Ctrl+Shift+Alt+R dosen't works.
I tested in a outdated Debian Testing VM, and works.
When I updated the VM, stop works, so I conclude that's gnome-shell bug or some
another package that makes screen recorder works.

Yes, this is fixed with gjs 1.87.2-1. See https://bugs.debian.org/1127677
I'm marking this bug as done since I don't think the Debian bug
tracker's way of handling merged bugs works very well.
