I followed the procedure you gave, and I cannot see a significant difference between the xdvi and gv display. The little difference I see is probably due to different rendering. When I compare the result of latex nfssfont; dvips nfssfont.dvi; gv nfssfont.ps & to pdflatex nfssfont; gv nfssfont.pdf & I see no difference at all.
