ZRTP support requires a specific option --enable-zrtp passed to ./configure, which the debian/rules file doesn't do.
Plus it needs libzrtpcpp: but linphone's patched version from their git repo (git://git.linphone.org/zrtpcpp.git), not the stock version in debian already. And even then the option is not visibly available: according to upstream you should select "None" and ZRTP will be auto-detected if the other party has it. I will test this using a hand-compiled version talking to the Windoze binary. If it does work the problem is how to provide it on Debian by default: maybe upstream's patched library will have to be packaged separately and uploaded to Debian?? then the rules file adjusted to use this option.
