Empathy doesn't, and shouldn't, do networking - protocol backends are
responsible for that. telepathy-rakia uses sofia-sip, which (according
to git grep) appears to have support for NAPTR and SRV records, although
I have no idea how/whether that works.
telepathy-gabble does the analogous SRV lookups for _xmpp-client._tcp,
although I think SRV lookups for an associated STUN or TURN server might
still be an open feature request.
