I'm not sure I understand your point (and I'm not an expert in pbuilder/cowbuilder or gbp, so maybe it's obvious), as I'm reading the manpage : git-pbuilder is a wrapper around pdebuild intended for use by git-buildpackage. It configures pdebuild to use cowbuilder by default, Maybe you wanted to configure it so it doesn't use the default, and that doesn't work ?
