Many thanks for you quick answer and for these informations.
I was just astonished to see that the couple NginX+php5-fpm may be not
functional in Debian 'out of the box' and need additional configuration
to be operational. Anyway, even if its not a big deal for a sys admin,
it can take time to be understood (because there is nothing relevant in
log files). Hope this will be fixed, whatever the way used.

This change was noted in the NEWS section of the package already. the configs
in the package have been synced with Upstream NGINX and they made a post in
NEWS and the changelog that this might break fastcgi.
I can't make an accurate assessment here but I don't think this is going to be
"fixed". I suggest you look to my blog post at http://dark-net.net/?p=10
containing the actual NEWS entry which suggests possible solutions to fix this.
