I'd be very glad if you could package the gnome-pdf-tool for Debian, as it sounds to be the only simple to use GUI for changing PDF Metadata available. https://code.google.com/p/gnome-pdf-tool/ CodeLicense is GNU GPL v3. I would do it myself, but unluckily I am far not skilled enough to do that and would need to study more to be able, for what I unluckily don't have the time.
