let us sort out the difference things mentioned here. Despite what has worked or not worked in the past, the *-headless packages are not supposed to run any graphical user interface. So if you want to run Minecraft, you should install the default-jre package, which will install a openjdk-*-jre package. As far as that is concerned, AWT related errors/exceptions while running on a headless JVM are not bugs, but to be expected. If I understood you correctly, you problem also exists when you run on openjdk-8-jre, correct? I will reassign the bug to the correct package then. The log you posted above is sadly no help at all.
