Looking at the git repo, it seems if I build the commit just before the switch to debhelper (commit 3ca5b2809f6bb1828858303140d8fe1950a7caf7) then the examples are included. The CONTRIBUTORS file was appears in /usr/share/doc/mitmproxy before the change. This problem can be solved by including a debian/docs file with this contents: CONTRIBUTORS examples -- Edward.
