Hello, thanks for reporting this issue. Unfortunatelly we can't solve this at the moment easily :( The PHP team is currently running a transistion to PHP7, that's why all packages are recompiled against PHP7 [0]. On the other side roundcube is currently not working with PHP7 and the pear packages built against PHP5 are removed from the repository . Roundcube has released a first 1.2-beta with PHP7 support [1] but this will take some month till the the version is released.
So the only solution is to run roundcube with PHP 7 and create a patch for that. Maybe it is enough to backport the related patches to ticket 1490416 [2]. For me it is out of scope currently do that.
