The dependencies currently have mysql-server as a recommends only, so you can avoid installing it by using --no-install-recommends. the same would hold for dovecot-*
There is however a dependency on mysql-client which would prevent one from using mariadb-client (and would cause a conflict with the server part since mariadb-server-10.0 depends on mariadb-client-10.0, which conflicts with mysql-client-5.5) if this can be helpful for the package maintainers, both mysql and mariadb packages have a Provides line that could let users have either mysql or mariadb: Provides: virtual-mysql-client and for the server counterpart: Provides: virtual-mysql-server
