Thanks for your suggestion. That said, upstream provides systemd unit files.
I never take the time to look at them yet, but I will try to do it also.

  That said, my main problem with an init script for owfs if that the
fuse part need a mountpoint and I'm not sure which one to propose.
Your init script do not tell about a mountpoint. I think you give one
in the config file? Which one do you use? Do you think it is a correct
one to use by default in Debian?
  On my systems, I tend to mount it under /srv but this is not an
acceptable default for Debian.
