Also, I tried to explicitly set utf-8 as default encoding for apache and php, agagin, with no effect... Finally, I came across the mentioned stackoverflow issue and tried php-xml.
I have just looked into /usr/share/dolibarr/htdocs/install/check.php which apparently is the installation checker. The relevant check seems to be on line 133 and following. The test checks the existence of the function "utf8_encode". And in fact, this one seems to be provied by php-patchwork-utf8 -- at least according to the documention [1]. Strange...
