Tested Bernhard's solution of adding vsyscall=emulate` in /etc/default/grub:
`GRUB_CMDLINE_LINUX_DEFAULT="quiet iommu=soft vsyscall=emulate"` and then running `sudo update-grub` and rebooting. I have now rerun the debootstrap commands for wheezy and jessie, since it turns out the original ones never completed due to the bug, and I can now chroot into both without problem.
