This is a known issue: https://github.com/jgm/pandoc/issues/5801 It will be fixed in the upcoming pandoc 2.8 release.
A simple workaround which could be backported
would be to add this line to the default latex
template (default.latex):
\renewcommand{\linethickness}{0.05em}
