Commenting out the START= line in /etc/default/slimserver causes 
the server to not start (which is what I wanted), the test in 
/etc/init.d/slimserver seems to be for the existance of $START, 
not its value.

[EMAIL PROTECTED]:~$ head /etc/default/slimserver
# Set this to zero to disable slimserver startup.
#START=0
