I was looking for what sbuild option I might use if I wanted to make
gcc a symlink to Clang for a session, without modifying the source
chroot. sbuild(1) says
 --starting-build-commands=string
Run these commands after dependencies are installed, just before the
package build with dpkg-buildpackage starts. The command is run as the
(non-root) user running sbuild inside the chroot.

Non-root, so it sounds like it wouldn't do the job. However the table
lower down says this:
 command/action root chroot %c %e %d,%p
 ──────────────────────────────────────────────────────────────────────────
 ...
--starting-build-commands yes inside no no yes
 Run dpkg-buildpackage

This indicates that the commands *are* run as root. Since my symlink
command works it's probably the former that's wrong.
