So, I've bangged my head a few time the last couple of days, with a broken
mail setup, but it seems that I managed to find the problem, at least the
setup is now running for 24h without issue.

I had set (for some reason I can't really remember, since the configuration is
quite old):

$max_server = 1;

That was working just fine in Buster, but in Bullseye apparently it doesn't (I
guess previously the one server was doing both master and child role and now
it doesn't).

I'll let it run a bit more and then close the bug if it works.
