This is almost certainly upstream issue https://gitlab.freedesktop.org/pipewire/pipewire/-/issues/2451 . According to the bug report, it was fixed in 0.3.58, but it's still present in Debian 0.3.63-1. Adding the allowed-rates option as described fixed it for me as well.
