For now I'm at least adding a cross-reference from --overwrite (in dgit(1)) to --split-view=always.
I still think we may want more guidance in this area, but it's complicated. A lot of it depends on individual foibles and opinions of the co-maintainers, so an opinionated workflow guide isn't the right answer.
