The imhiredis plugin was added to upstream in 2021, the omhiredis long before that (earlier than 2014). The rsyslog-hiredis subpackage in Debian was added in 2016.
If there is demand for imhiredis, it can certainly be enabled. It will add an additional dependency on libevent, but that library seems reasonably well maintained, so that should be ok.
