Bug#1121374: gstreamer1.0 build-depends on libunwind-dev, but doesn't use it

libunwind and libdw were disabled in general as a result of 1093376 in
early 2025, and I forgot to remove the dependencies back then; leading
to this discussion.

so yes, it was an error on my part.
