The specification of .desktop files is hosted under <http://freedesktop.org/wiki/Standards>, check this spec: <http://freedesktop.org/wiki/Standards_2fdesktop_2dentry_2dspec> I'm not sure which particular version of the spec is honored, nor how much is covered by the GNOME implementation.
