I have a bunch of LVM volumes (/dev/mapper/*) on my laptop and laptop_mode_tools doesn't remount them when commit=600 where my / (/dev/hda5) gets.

This is by design. As of version 1.05, by default laptop mode tools only remounts those mount points whose device name contains one of the devices listed in HD. This prevents remounting of filesystems unrelated to the hard drives that fall under the laptop power management strategy. You can have them remounted anyway by listing all partitions in the configuration option REMOUNT_PARTITIONS manually.
I'll put an entry about this in the FAQ though, as it's not completely intuitive.
