Iceweasel used to prefer application/xhtml+xml over text/html. Now, it prefers them equally, and specifies text/html before application/xhtml+xml, which leads to servers such as Apache serving text/html in preference to application/xhtml+xml.
XHTML is a newer standard which supports features such as XML namespaces, embedded SVG, and embedded MathML. HTML supports none of these. Additionally, there are sites that have additional features enabled in their XHTML versions, and provide an HTML version to deal with the brokenness that is Internet Explorer. XHTML is obviously the superior choice.
