Well, the server would have to "guess" which hostnames some client might
possibly use. This might be possible but, according to Thomas, might
even be influenced by some DHCP settings (if I understood that
correctly). So, I don't think it's worth the efforts.

No, imho, the user should configure /etc/hosts (on the server)
correctly. Then no additional configuration would be required. Editing
$sshdir/known_hosts is required only when additional hostnames were
added after running fai-setup / make-fai-nfsroot.

Imho, this should be documented in the FAI guide (instead of the
manpage) as other parts of FAI might depend on that as well.
