xsession:

I see that this is being executed when I selected "default" (changing it to
e.g. openbox starts that up instead).

There is no .xinitrc.

If I select "GNOME" in GDM instead of "Default",
XDG_DATA_DIRS="/usr/share/gnome:/usr/local/share/:/usr/share/:/usr/share/gdm/"
and epiphany prompts with

        "Open this file? File Type: "PDF document". You can open ... using
        "Document Viewer" or save it.

evince is invoked.

Does gnome-session set the XDG_DATA_DIRS variable in some circumstances or is
it set by something other than gnome-session when "GNOME" is selected via GDM?
