It seems package pinning works to some extent but the syntax of the version field is somewhat peculiar. It seems that an asterisk is ignored if it is preceded by a number so you can pin to 3.* or 3.0.* but not 3.0* Also the success of pinning depends on the order of the pins. I had to move the mplayer pin before the other unstable pins for it to take effect.
