Hi Michelle,
can you please tell me how do you check for new messages? Do you open the
mailbox and the messages are marked as Old? Are they marked as read? How do you
recognize that mutt is not able to find new messages?

I use dovecot, which has the same behavior of courier imap (messages moved to
cur/) and I can see my new messages, additionally you're the first and only
person to report this behavior with courier so it sounds a bit strange to me.
