The iscsitarget-module is a virtual package provided by one of the specific 
iscsitarget-module-KERNEL-VERSION.
This package will have a Provides: providing iscsitarget-module

What I am not sure is why there aren't the current packages for the current 
squeeze kernel.

I did an apt-cache search for the current scheduled kernel for squeeze i.e. 
2.6.32 and don't see any other kernel module packages also.
