The "Packet Bytes" pane already shows the packet data as ASCII text near the hexdump. Text based protocols' dissectors can (and sometimes do) provide an option to show raw text like the SIP dissector. To enable this feature please check Edit -> Preferences -> Protocols -> SIP -> Display raw text for SIP message.
