After starting samba, then winbind, clients cannot authorize correctly (seemingly) due to a lack of agreement on the separator character between smbd and winbindd. Winbind parses the option literally and the first non-(white)space character seen after the = is taken as the separator. However, smbd doesn't seem to parse it in the same way and the separator character must be put between quotes to distinguish the character.
