/desktop/gnome/session/required_components/windowmanager to 'sawfish' (which might be worth mentioning in README.Debian, BTW), and while that knocked out metacity, it gave me a WM-less desktop. After some more Googling and playing around, I found that copying /usr/share/gnome/wm-properties/sawfish.desktop to /usr/share/applications solved the problem, and I got a nice sawfish-enabled desktop.
