One more tidbit, if I leave the "winbind separator" line active in the config, but I reverse the order so that it comes after the "winbind use default domain" line -- it works! So, winbind separator = \\ winbind use default domain = yes makes `wbinfo -u` return DOMAIN\user; however, winbind use default domain = yes winbind separator = \\ makes `wbinfo -u` return just user.
