I suspected it couldn't be too difficult, even though it sounds
awkwardly contorted (I still cannot imagine why are all these
workarounds needed in order to do what should be a simple string
substitution...).

And I've just checked it by myself!
I had noticed that there are two English variants for the sky subtitles
by reading /usr/share/doc/scummvm/README.gz, but didn't think they could
differ so much...
Anyway I thought I was seeing the british english subtitles, since I had
no language option for sky in my .scummvmrc
[scummvm]
versioninfo=0.7.1
[sky]
subtitles=true
and /usr/share/doc/scummvm/README.gz states that English (Great Britain)
is the default...
Now I've just set
[scummvm]
versioninfo=0.7.1
[sky]
language=gb
subtitles=true
and got different subtitles (surprise! apparently English USA is the
actual default!).
Mmmmh, I think I've just found a bug in ScummVM documentation...
Do you need a separate bug report against scummvm?
