I have installed talkd and it exposed itself to the world, binding on address 0.0.0.0. I think it would be better if it binded to 127.0.0.1 by default (just configure inetd.conf with 127.0.0.1:talk and 127.0.0.1:ntalk instead of only "talk" and "ntalk"). Then the user could change it later if he see fit. An option that would mean a little more work, but which seems more interesting to me, is to ask the user for that during install. That can be done using debconf.
