In the case of gtalk, empathy no longer has advanced settings. However, empathy does add extra identities to accept.
For example, my gtalk account has this set: param-extra-certificate-identities=talk.google.com; And the certificate displayed in the untrusted dialog has a server name of talk.google.com. AFAICT, empathy explicitly trusts it if the server name is in the extra-certificate-identities list.
